VegBox Recipes reader, Carol G, contacted me yesterday, after the May newsletter went out, to let me know that May also brings with it “Be Nice to Nettles Week” (13th – 24th May).
It would have been a crime to miss an event like this, when nettles can be found and foraged in abundance without costing us a penny. So here are some nettle factoids and, more importantly, Carol G’s recipe for Nettle Pesto.

I will certainly give this a try. I love pesto and I love nettles. I have a huge space in the garden where I leave the nettles to their own devices.

I have lots of nettles so I will try it with and without — I’m always getting in trouble for adding chilies to everything
Jalapeno peppers stuffed with nettle pesto, topped with grated cheese and baked in the oven, maybe?

Well, I tried this yesterday and I really didn’t like it. I like pesto and I’m always making nettle tea and vinegar, so I thought I’d enjoy this.
@Andrew – Oh no!! Was it fundamentally gruesome for you, or can you think of something about the recipe to change to make it enjoyable? And DO link us to a nettle vinegar recipe if you’ve got some time!
I don’t really think nettles have much of a taste to them to be honest, so maybe the parmasan cheese and the raw garlic were too overpowering.
Nettles may be ok if they were mixed with some other herbs such as basil. The only flavour I was getting was from the cheese and the raw garlic. I’ve come across nettle pesto recipes in the past on YouTube but never thought of trying it until I found the recipe on here.
Making nettle vinegar and dandelion vinegar is easy and you don’t need to follow a recipe. This is how I make them
